Peach Pie...

Good Morning Everyone..a rather cool one, but at least it is not raining! I wish summer would come back! For my post today I did the Magnolia Down Under Challenge, which was to have buttons on your card/project! So I thought I would incorporate my "Peach Pie" recipe!

Below is the inside of my card..on the flip side (which you cannot see) is the rest of the recipe!
I have made this Peach Pie and it has become a favourite. I was out today at the grocery store and I was quite surprised to see that Ontario Peaches are still on the shelves! Yeeh! Here is the recipe for those that want to try something yummy...Just remember to add a nice scoop of vanilla ice cream to the plate when serving it up!
Peach Pie
Short Bread Crust:
1 1/3 flour
2 tbsp. brown sugar
1/2 cup butter
1 tbsp. water
Peach Filling:
5 cups sliced peaches
1 tbsp. lemon juice
1/2 cup sugar
1/4 cup flour
Topping:
1/2 cup flour
1/2 cup brown sugar
1/4 cup soft butter
1/2 tsp. cinnamon
Crust: Combine flour and sugar; cut in butter until it resembles coarse crumbs. Add water, mixing until dough holds together. Roll dough into a flat circle. Then press mixture firmly into
9 inch deep dish.
Filling: Combine peaches and lemon juice; sprinkle with a mixture of sugar and flour, toss to coat evenly. Just before baking, spoon into prepared pie shell and sprinkel with streusel topping.
Topping: Blend flour, sugar and butter with a fork.
Bake in lower oven at 400 for 15 minutes. Reduce heat to 350 and bake for 30 minutes!

Christine, gorgeous card. Love the colour scheme and the clean look of the card. Fabulously coloured as always. I luuuuvvv... peaches, but I usually eat them fresh. Might give your recipe a try, though. I always have trouble with the regular pie crust--they shrink too much on me. Your shortbread crust really sounds good to me.

Oh my goodness, this is beautiful!! I have this image headed my way and I think now, I will just take a tent out to my mailbox and live there until it arrives so that I can be ready to try my hand at making something this precious when it arrives. I adore this, really really stunning. I think you have used this the EXACT way it was intended and if I were on the recieving end of this beautiful recipe card, I would frame it and hang it in my kitchen. Safe to say, I love it, lol!!
